Preheat
your oven to 160°C (325°F).
In a small bowl, mix together oregano, basil, thyme, rosemary, parsley, garlic powder, onion powder, black pepper, and salt.
Rub the spice mixture all over the chuck roast.
Heat olive oil in a large Dutch oven over medium-high heat.
Add the chuck roast and sear on all sides until browned, about 4-5 minutes per side.
Remove the roast from the Dutch oven and set it aside.

Sauté until the onions are soft and translucent, about 5 minutes.
Return the chuck roast to the Dutch oven.
Add beef broth until the roast is mostly covered.
Cover the Dutch oven with a lid and transfer it to the preheated oven.
Cook for about 3-4 hours, or until the beef is tender and falls apart easily with a fork.
Once the beef is cooked, remove it from the Dutch oven and let it rest for about 15-20 minutes.
Using two forks, shred the beef.
Serve the shredded beef on crusty Italian rolls, topped with sautéed onions and hot giardiniera peppers if desired.
