Fine chop the onion, slice the carrots, and cube chop the potato.
Add in a pan the oil, the diced onion, grated or mashed garlic, basil and oregano. Saute until the onion is translucent and barely browned.
Add the carrot and potato, mix, and saute for 1-2 minutes.
Cover with water, and cook around 15 to 20 minutes.
After 15 to 20 minutes add the paprika, nutritional yeast and cream, and mix.
Bring it back to boil, and process with a blender until the soup is creamy and smooth.
Add the broccoli florets, cover with lid, bring it to boil, and cook for 2 minutes.
Now is ready to serve. Sprinkle the soup with a handful of cheese / serving.
