In a large bowl,
combine the shredded cabbage, sliced red onion and grated carrots.
In a separate bowl, whisk together the mayonnaise, sour cream or yoghurt, sugar, vinegar, Dijon mustard, salt, and pepper until well combined.
Pour the dressing over the cabbage, red onion and carrot mixture.
Toss the ingredients together until the cabbage, red onion and carrots are evenly coated with the dressing.
Cover the bowl with plastic wrap and refrigerate for at least 1 hour to allow the flavors to meld together.
Before serving, give the coleslaw a good stir to ensure that the dressing is well distributed.
