It is easy, healthy, absolutely delicious, and has been a family favorite for years. It’s always a hit whenever I serve it up 🙂 Enjoy 🙂
Fine chop the onion, and cut cube all the vegetables and potatoes.
Sauté the onion, with the preferred oil. I did in coconut oil. Add the vegetables and sauté all together.
In this phase stir constantly. Cover the vegetables with water.
Season with salt and pepper to taste.
Cover with lid, and cook for 15 minutes.
After 15 minutes blend the soup until smooth.
Add the unsweetened double cream to the soup. Mix well.
Add the chopped parsley to the soup. Bring it to the boil.
Roast the the peeled sunflower seeds in a pan for aprox. 3-4 minutes.
Serve the soup with the roasted sunflower seeds and chopped parsley.
