How To Start?
In a small bowl, mix the flour and yeast.
Add the lukewarm milk and stir until well combined.
Cover the bowl with plastic wrap and let it rest in a warm place for about 1 hour or until it doubles in size.
Make The Dough
In a large mixing bowl, combine the starter with the flour, sugar, softened butter, eggs, vanilla extract, orange zest, lemon zest, and salt.
Mix the ingredients until a dough forms. Knead the dough on a floured surface until it becomes smooth and elastic.
Place the dough in a greased bowl, cover it with plastic wrap, and let it rise in a warm place for 2-3 hours, or until it doubles in size.
Punch down the risen dough, and knead in the candied fruits, raisins, and chopped almonds.
Shape the dough into a ball and place it in a panettone mold or a tall, cylindrical pan lined with parchment paper.
Cover the pan with a clean kitchen towel and let the dough rise for another 2-3 hours.
Preheat the oven to 180°C (350°F).
