Instructions
In a large pot or Dutch oven,
brown the ground beef over medium heat until fully cooked. Drain off any excess fat.
Add the onion, garlic, carrot, and celery to the pot and cook until softened, about 5 minutes.
Pour in the red wine and bring to a simmer. Cook for about 10 minutes or until the wine has reduced by half.
Stir in the fresh tomato paste, beef broth, oregano, basil, thyme, bay leaf, salt, and pepper.
Bring to the boil, then reduce the heat to low and let the sauce simmer for 1 hour and 40 minutes, stirring occasionally.
Remove the bay leaf before serving the sauce over cooked pasta.
