  1. Preheat

    your oven to 160°C (325°F).

  2. In a small bowl, mix together oregano, basil, thyme, rosemary, parsley, garlic powder, onion powder, black pepper, and salt.

  3. Rub the spice mixture all over the chuck roast.

  4. Heat olive oil in a large Dutch oven over medium-high heat.

  5. Add the chuck roast and sear on all sides until browned, about 4-5 minutes per side.

  6. Remove the roast from the Dutch oven and set it aside.

  8. Sauté until the onions are soft and translucent, about 5 minutes.

  9. Return the chuck roast to the Dutch oven.

  10. Add beef broth until the roast is mostly covered.

  11. Cover the Dutch oven with a lid and transfer it to the preheated oven.

  12. Cook for about 3-4 hours, or until the beef is tender and falls apart easily with a fork.

  13. Once the beef is cooked, remove it from the Dutch oven and let it rest for about 15-20 minutes.

  14. Using two forks, shred the beef.

  15. Serve the shredded beef on crusty Italian rolls, topped with sautéed onions and hot giardiniera peppers if desired.
