  5. Once the sugar has dissolved, insert a candy thermometer into the mixture.

  6. Cook without stirring until the syrup reaches 114°C (240°F), which is the soft-ball stage.

  7. While the syrup is cooking, microwave the gelatine mixture for about 30 seconds until it becomes liquid.

  8. Pour this into the bowl of a stand mixer.

  9. Once the syrup reaches 114°C (240°F), carefully pour it into the gelatine mixture in a slow, steady stream while the mixer is running on low speed.

  10. Gradually increase the mixer speed to high and beat for about 10-12 minutes, until the mixture becomes very thick and glossy.

  11. Add the salt, pumpkin pie spice, vanilla extract, and orange food coloring.
    Mix until well combined.

  12. Grease a square or rectangular baking dish and dust it generously with powdered sugar. (If you want, you can use different shape moulds, like pumpkin, witch etc.)

  13. Pour the marshmallow mixture into the prepared dish, smoothing the top with a spatula.
    Dust the top with more powdered sugar.

  14. Allow the marshmallows to set at room temperature for at least 4 hours or overnight.

  15. Once set, use a knife or cookie cutters to cut the marshmallows into Halloween-themed shapes.

  16. Dust the cut marshmallows with more powdered sugar to prevent sticking.
