  1. Roughly chop the pumpkin flesh and celery sticks.

  2. In a food processor, whiz the pumpkin flesh until nearly smooth.

  3. Add the celery, garlic, and seasonings and whiz for 40 seconds more. Pour into a big pan.

  4. Mix with the the vegetable stock and coconut milk then bring it to a boil. Cover and simmer for 15 minutes.

  5. After 15 minutes remove from the heat and blend until smooth, working in batches if necessary.

  6. Season to taste if need and ladle into warmed soup cups.

  7. Season with pumpkin seeds and freshly ground black pepper to taste and serve while hot with crusty bread.
