Set the crepes aside, letting them to cool down.
Meanwhile cut the fruits in small pieces, then set aside.
When the crepes are cold, make the gelatine.
Mix the 100 ml milk with the gelatine, then set aside for 5 minutes.
Make the filling cream while the gelatine resting.
Mix the crème fraîche with the icing sugar until the sugar is totally melted.
Put the milk and gelatine mix in the microwave, for 10 seconds. Check, if is not yet liquid, put back for another 10 second.
Keep making until the gelatine is liquid.
Add the gelatine to the crème fraîche and incorporate well, to be gelatine everywhere. This will keep together our cake.
Put together the cake as I do in the video.
Place the cake into the fridge for minimum of 6 hours, but better overnight.
After six hours or overnight, make the glaze for the cake.
Melt the glaze ingredients together in the microwave. Make the same like with the gelatine, check every 10 second.
When is melted, stir until the ingredients are well mixed. Pour to the top of the cake, and side. The glaze must cover the cake everywhere.
Place back into the fridge for another hour, or until the chocolate is set.
Enjoy, Good Appetite!
