Peel and grate the raw potato and then drain the grated potatoes of liquid.
In a large mixing bowl, whisk together the mashed potatoes and raw grated potatoes until well combined.
Whisk in the egg, egg white, milk, and oil until completely combined.In a separate large mixing bowl, whisk together the flour, baking powder, and salt.
Stir together the dry and wet ingredients until a soft dough forms.
Flour your counter top lightly, then place the soft dough on it and kneed it 6 to 7 times.
Form the dough into a ball and place it in an oiled cast iron pan, or round cake mould.
Cut an x in the top of the dough with a serrated knife.
Bake at 190°C (375°F) for 45-55 minutes. The top should be golden brown.
Allow to cool for 10 minutes on a wire rack.
Run a butter knife around the pan’s edges to release the bread, then remove it from the pan and place it on a cooling rack to cool completely before slicing.
