Potato Latkes For Hanukkah

Hanukkah is a joyous celebration of Jewish national survival and religious freedom. 

During Hanukkah, many families invite relatives and friends to light the menorah, sing songs, play dreidel, exchange gifts, and enjoy traditional Hanukkah food, especially latkes (potato pancakes). 
The light of the eight candles in the menorah commemorates the miracle of light, representing how the Holy Temple had enough oil in the menorah for one night, but remained lit for eight nights.

Thus, oil is a key element in the Hanukkah holiday and plays an important role in the cooking of traditional foods.

French fries, called latkes in Yiddish and levivot in Hebrew, are the most popular Hanukkah foods. They are chopped potatoes mixed with onion, egg, flour and spices, then formed into small pancakes and fried in oil. 

Serve these potato latkes with apple sauce, or smoked salmon with a dollop of sour cream. Traditionally is made for Hanukkah, but they’re great all year.

  1. Peel the potatoes and onion. Coarsely grate the onion and potatoes into a large bowl. Salt to taste, and mix.
    Leave to rest for about 15 mins so the liquid releases from the onions and potatoes.
    After 15 min squeeze out the liquid.

  2. Add the flour, eggs, grounded black pepper, and mix well.
    Pour oil into the pan so that it is 2-3 cm deep.
    Set over a medium heat for a few minutes until it ripples.

  3. Spoon in the mixture to the size you want.
    Fry them on each side until browned, approx for 2 mins.
    Remove to a plate lined with kitchen paper, then season with a sprinkling of salt if needed.
    Serve with the sour cream and smoked salmon, finished with a sprinkling of chives, or just apple sauce – both are traditional.
