Coarsely chop the tomatoes.
Saute the mash or grated garlic in olive oil.
Add the chopped tomatoes, salt to taste, and cook for 15 minutes. -
Meanwhile remove the bread crust, and cut the bread to equal sizes.
Toast golden brown the bread cuts in 2 tbls of olive oil, and then set aside, letting to cool down. -
Boil the spaghetti pasta. Follow the instruction from the package.

We returning now to the sauce.
Add the tomato paste to the sauce. Add the mascarpone either, and mix well. Set aside. -
Put the toast in a processor, and process until fine.
We will need this to sprinkle the top of the dish just prior to serving. -
Coarsely chop 4-5 fresh basil leaves.
Add the al dente cooked spaghetti pasta to the sauce, and mix gently.Ready to serve.
Sprinkle the top with the toasted breadcrumbs, and parmesan cheese.Enjoy, Good Appetite!
