How to prepare this recipe
Place in a processor all the batter ingredients.
Cover, and process until smooth, and all the ingredients are well combined. Aprox 3 to 5 minutes.
Preheat the pan on medium high heat, and brush with oil.
Pour one ladle of batter in the hot pan. Lift and tilt pan to coat the bottom evenly with batter.
Cook for a few seconds on each side.
Repeat with the remaining batter, greasing the pan after each crepe.
When all the crepes are fried, set aside and make the filling.
Combine the mascarpone with sugar, and vanilla sugar or extract.
Mix until the sugar is completely melted. Set aside.
Slice all the strawberries. Gently incorporate the slices strawberries into the mascarpone mixture.
Fill the crepes with the mascarpone – strawberry mixture.
