I’m having one of those days today I have a such a sore throat and for such days there’s nothing better than a nice cup of hot Chicken Vegetable Soup.So give this soup a try, it’s perfect for a cold winter day (but not only), or when you’re feeling sick, it’s a great comfort food.

This Chicken Vegetable Soup recipe is absolutely wonderful. I tell you with all my heart that I haven’t eaten a tastier soup for a long time, especially one made with commercial chicken.
Maybe my grandmother’s soup might be tastier, but considering that she made it with chicken and vegetables from her garden, we can’t even compare 🙂



  1. Peel the onion, garlic and vegetables. Slice or grate the vegetables. It is your choice.
    Fine chop the onion and garlic.

  2. Preheat oil, and sauté the onion, garlic, and vegetables.

  3. Add the chicken to the sautéd vegetables, and stir until white.
    Season with salt and pepper, then cover with water, and cook over low heat until the chicken is semi-cooked.
    Approx 20-25 minutes.

  4. Add the cauliflower florets (optional – pasta, noodle, dumpling) and cook until is done.

  5. At the end, sprinkle with chopped parsley and keep warm until served.
