How to prepare this recipe

This meatball and tomato soup is a warm, filling one-pot recipe made with tender meatballs, rice, onion, and a rich tomato broth. It is simple enough for an everyday family meal, but hearty enough to serve as a complete dinner on a colder day.

The meatballs cook directly in the soup, so they add extra flavor to the broth while staying juicy and soft. The rice helps thicken the soup naturally, making every spoonful comforting without needing complicated ingredients or extra steps.

Serve it with fresh bread, a spoonful of sour cream, or a sprinkle of chopped parsley if you like. It is a practical soup recipe for busy weekdays, meal prep, or any time you want something cozy and homemade.

  1. First make the meatballs. Fine chop the onion. Add the chopped onion to the mince.

  2. Add the eggs, rice and season with salt and pepper.
Mix the ingredients until all are well incorporated.

  3. Form the meatballs into desired size.

  4. Add the tomato juice, sugar, salt and pepper in a pot.
Add 2 liter of water and the fine chopped basil (optional).
My tomato juice was with basil, so I jumped this step.

  5. Cover with a lid and bring it to the boil, then add the meatballs.
Serve with a fresh slice of bread.
