To make this soup, start by heating up some olive oil in a large pot over medium heat. And then add some diced onion, also bell pepper, and jalapeno pepper and cook until the vegetables are softened. On the other hand the jalapeno pepper gives the soup a nice kick of heat, but of course you can adjust the amount to your liking. If you don’t like spicy food, you can omit it or use a milder pepper like a poblano or Anaheim.

A Little Spicy Black Bean Soup History
Heat the olive oil in a large pot over medium heat.
Add the onion, and then the bell pepper, and jalapeno pepper and cook until the vegetables are softened.
Stir in the garlic, cumin, and chili powder and cook for an additional minute.
Add the diced tomatoes, black beans, and vegetable broth to the pot. Bring the mixture to a boil.
Reduce the heat to low and let the soup simmer for 20-30 minutes.
Season the soup with salt and pepper to taste.
Serve the soup hot, garnished with diced avocado, chopped cilantro, and a dollop of sour cream (if using).
